Sweet Potato Casserole RecipeThe best part about Thanksgiving is the food, right? Well, and being in the company of family of course. But over the years it’s safe to say that food has taken over as the main event of the holiday, that’s if we are not factoring in black Friday shopping.

One of our favorite Thanksgiving dishes is the sweet potato casserole, and frankly, it’s underrated. People always talk about the turkey, the mashed potatoes and the pies, but the sweet potato casserole is put to the side, quite literally.

This year we are spending our Thanksgiving at a family reunion and knew that we probably wouldn’t get to experience all of the traditional Thanksgiving sides so we figured we would have an early taste of Thanksgiving and enjoy some sweet potato casserole this week.

This recipe makes 4 generous servings or leftovers for two. From experience, the leftover version of this tastes just as good, if not better. Pro tip: if left over, heat it up in the microwave for 30-45 seconds for a taste of pure heaven.

If you’re hosting a Friendsgiving or Thanksgiving dinner with more than 4-6 people, feel free to double this recipe and use a bigger pan. This recipe is sure to be a crowd pleaser!

Easy Sweet Potato Casserole Recipe with Vegan Marshmallows

 

SWEET POTATO CASSEROLE

Ingredients

  • 2 sweet potatoes peeled and chopped into 1/2 inch pieces
  • 1/2 stick butter
  • 3 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 2 pinches nutmeg
  • 1/4 teaspoon vanilla extract
  • 1 bag Trader Joe's vegan mini marshmallows

Instructions

  1. If you haven’t already, peel and chop the sweet potatoes in 1/2 inch pieces.

  2. Boil some water in a pot and add the sweet potato chunks once water boils. Boil for 15 minutes. Remove from heat.

  3. Drain the water from the pot.

  4. Add in the butter, sugar, nutmeg, vanilla extract and cinnamon. Mix as you mash the sweet potatoes. We didn’t even have to use a masher for this part since the potatoes were soft enough to use a wooden spoon, but you can use a masher if you prefer.

  5. Spray a baking dish with no non-stick spray. (We used the butter flavored one).

  6. Add in the sweet potato mixture and bake on 350 degrees for 15 minutes.

  7. Then take the dish out of the oven, cover in marshmallows and set oven to broil for 1-2 minutes until the marshmallows are slightly brown.

  8. Remove from oven and allow to cool before devouring!
