Gluten-Free Banana Oat Pancakes

In these last couple of months, we’ve been making an effort to eat healthier, especially since there’s a global pandemic going on, you know? And since we’ve been at home, we’ve had to get creative with the meals we are making.

But the real reason we stumbled upon this amazing recipe from Happy Toddler Club is because we had two bananas that were going bad. I didn’t really know what to do with them, but I knew that we were not going to eat them in their then-current state. Thanks to Pinterest, we got the idea to make pancakes and went from there.

In the past, I’ve tried banana pancakes and they turned out terrible so my mindset going into this was “let’s hope this isn’t nasty.” Thankfully, they turned out way better than expected to the point where Begad loved them — which is a BIG DEAL because he’s not usually into healthy foods.

The pancakes are soft, cinnamony and naturally sweet. You don’t really taste the banana that much unless it isn’t well-blended.

This recipe is easy to make and pretty filling. If we are both eating these, 1 batch is perfect for the two of us. If I am eating these alone on the weekdays, I’ll cook half the batch and leave the other half in the fridge for the next morning. Having a nutribullet makes this super easy because you can just put a cap on the cup and put it in the fridge.

We’ve been obsessed with these pancakes since first discovering this recipe so trust us, you’ve got to try it.

BANANA OAT PANCAKES

Ingredients

  • 3/4 cup Gluten Free Old Fashioned Rolled Oats
  • 2 Bananas
  • 2 Eggs
  • 1 1/2 teaspoon Cinnamon
  • 1 teaspoon Vanilla Extract

Instructions

  1. Blend the oats in a nutribullet, blender or food processor until it becomes a flour.

  2. Add the eggs, bananas, cinnamon and vanilla and blend until smooth.

  3. Add a little butter to a pan and put on medium heat.

  4. Pour pancake batter and let it cook for about 2 minutes or once the batter starts to bubble on top and then flip to cook the other side. Repeat until batter is finished.
